Hungarian mushroom soup is the kind of bowl that explains why Eastern European food is having a quiet moment. It's earthy, tangy, faintly smoky from sweet Hungarian paprika, finished with sour cream and a generous knob of dill. The base is butter, onions, mushrooms, and stock; the personality comes from paprika and the dairy finish. The whole pot takes 40 minutes from start to ladle, and the leftovers taste better the next day.

This recipe is closer to the version popularized by Mollie Katzen in the 1970s Moosewood Cookbook than a strict traditional Hungarian gombaleves (the original is often broth-based without dairy). The creamy, dill-forward version is what most Americans mean when they say "Hungarian mushroom soup," and it's earned that name through 50 years of weeknight stove-tops.

What you need

Serves 4 as a main, 6 as a starter.

  • 4 tablespoons unsalted butter
  • 2 cups yellow onions, diced (about 2 medium)
  • 1 1/2 lb cremini or white button mushrooms, sliced 1/4 inch thick
  • 2 tablespoons sweet Hungarian paprika (the good stuff, not generic)
  • 1 tablespoon soy sauce
  • 2 cups vegetable or chicken stock
  • 1 cup whole milk
  • 3 tablespoons all-purpose flour
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh dill, chopped (do not substitute dried)
  • 2 teaspoons fresh lemon juice
  • 1/2 cup sour cream, at room temperature
  • 2 tablespoons fresh parsley, chopped

The method

  1. Saute the onions. Melt the butter in a large heavy pot or Dutch oven over medium heat. Add the onions with a pinch of salt and cook 6 to 8 minutes until soft and translucent.
  2. Add mushrooms. Tip in the sliced mushrooms. Cook 8 to 10 minutes, stirring occasionally, until they release their water and most of it evaporates. The mushrooms should look glossy and reduced in volume.
  3. Bloom the paprika. Sprinkle in the paprika and stir for 30 seconds. Don't let it scorch. Paprika gets bitter when it burns, so move fast.
  4. Add liquid. Pour in the soy sauce and 1 1/2 cups of the stock. Bring to a simmer, reduce heat to low, cover, and cook 15 minutes.
  5. Make the slurry. While the soup simmers, whisk the milk and flour together in a small bowl until completely smooth. No lumps.
  6. Thicken. Pour the milk-flour slurry slowly into the simmering soup, stirring constantly. Add the remaining 1/2 cup stock. Simmer another 10 minutes, stirring often. The soup will thicken to a velvety, pourable texture.
  7. Finish. Off heat (this is important), stir in salt, pepper, dill, lemon juice, and sour cream. The off-heat step keeps the sour cream from breaking.
  8. Serve. Ladle into bowls, top with parsley, an extra pinch of dill, and crusty bread on the side.

Why paprika matters more than you think

Hungarian paprika isn't optional. The flavor of this soup hinges on it. Look for sweet Hungarian paprika (edesnemes), which has a deep red color, mild heat, and a slightly sweet, smoky aroma. Generic supermarket paprika is often older and tastes like nothing in particular. Spice shops, online retailers, and most well-stocked grocery stores carry real Hungarian paprika. A 2-ounce tin runs about 5 to 8 dollars and lasts months.

If you can find smoked Hungarian paprika (csemege), use half sweet and half smoked for an extra layer of depth. Avoid hot paprika in this recipe unless you specifically want a spicy version, since it overwhelms the dill and sour cream.

The dairy finish, explained

Two dairy additions handle two jobs. The milk and flour slurry (a basic bechamel base) thickens the soup and gives it body. The sour cream at the end adds tang and richness. They're not interchangeable.

Two tips to keep the dairy smooth:

  • Bring the sour cream to room temperature before stirring it in. Cold sour cream added to hot soup is more likely to curdle.
  • Stir it in off the heat. Sour cream's proteins break above a simmer.

If your soup still looks slightly broken when you add the sour cream, whisk in a tablespoon of cool milk and it usually comes back together.

Choosing your mushrooms

White button or cremini mushrooms are the workhorses here, and they're what most traditional recipes call for. You can mix in other varieties for more complexity:

  • Cremini (baby bella): Default choice. Deeper flavor than button, holds shape well.
  • Shiitake: Adds umami and a meaty bite. Use no more than a third of the total weight.
  • Oyster: Adds a silky texture. Tear into bite-sized pieces rather than slicing.
  • Porcini (dried): Rehydrate 1/2 oz in 1 cup of warm stock for 20 minutes. Chop the porcini, add with the cremini, and strain the soaking liquid into the soup pot. Massive flavor boost.

Whichever you choose, slice the mushrooms uniformly so they cook in the same time. Fresh, firm mushrooms cook down to about half their original volume, so don't be alarmed by what looks like an overflowing pot at the start.

Make it ahead

This soup actually improves overnight. Make it through step 6, cool, and refrigerate up to 3 days. Reheat gently over low heat and add the sour cream, dill, and lemon juice just before serving. If you've already added the dairy and it sat overnight, reheat slowly and stir constantly. It may look slightly grainy when reheating leftover dairy-added soup, but it tastes fine.

Freezing isn't ideal because of the dairy. If you want to freeze, do it after step 4 (before adding milk, flour, or sour cream). Freeze flat in freezer bags for up to 3 months. Thaw overnight, reheat, then finish with the slurry and dairy.

What to serve with it

  • Crusty sourdough or a rye loaf, ideally warm
  • A simple green salad with a sharp vinaigrette to cut the richness
  • Buttered egg noodles, if you want to stretch it into a heartier meal
  • Roasted root vegetables on the side: carrots, parsnips, or beets

Variations

Vegan version

Swap butter for olive oil. Use full-fat coconut milk in place of whole milk (it won't taste coconutty here, especially next to the paprika). Replace sour cream with cashew cream or a good unsweetened plant-based sour cream. Use vegetable stock.

Gluten-free

Replace the flour with 1 tablespoon cornstarch whisked into the milk. The texture will be slightly different (more glossy than velvety) but the result is still excellent.

Heartier main-course version

Add 1 cup cubed cooked chicken or 1 cup cooked wild rice with the milk slurry. Both work well, neither feels traditional, but both make a complete meal.

Common errors and fixes

  • Soup is too thin. Whisk another tablespoon of flour into 1/4 cup cold milk and stir it in. Simmer 5 more minutes.
  • Soup is too thick. Stir in stock or milk, 1/4 cup at a time, until you hit the consistency you want.
  • Sour cream curdled. Whisk in a couple tablespoons of cool milk off heat. If it's badly broken, blend a small portion of the soup smooth and stir it back in.
  • Tastes flat. Add another teaspoon of lemon juice and a generous pinch of salt. Acidity wakes the whole pot up.
  • Paprika tastes bitter. You probably scorched it. Next time, take the pan off heat before adding it, then return to low heat.
