Green beans and mushrooms balance each other on three axes:

Ingredients for 4 to 6 servings

  • 1 lb fresh green beans, trimmed
  • 8 oz cremini or button mushrooms, halved or sliced thick
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 medium shallot, finely sliced
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 2 tsp fresh thyme
  • 1/4 cup slivered almonds (optional)
  • Salt and black pepper to taste

Step-by-step method

  1. Bring a large pot of well-salted water to a boil. Set up a large bowl of ice water beside it.
  2. Add the green beans. Cook 3 to 4 minutes until they are bright green and tender-crisp. Transfer immediately to the ice bath. This stops the cooking and locks in color.
  3. Drain the beans and pat dry. Wet beans will steam in the pan.
  4. Heat 1 tbsp butter and 2 tbsp olive oil in a large skillet over medium-high. Add the mushrooms in a single layer. Do not stir for 3 minutes. Stir once, cook 3 to 4 more minutes until deeply golden.
  5. Push the mushrooms to one side. Add the remaining 2 tbsp butter, shallot, and almonds if using. Cook 2 minutes.
  6. Add garlic and thyme, stir 30 seconds.
  7. Add the green beans. Toss everything together for 2 minutes until the beans are heated through.
  8. Off the heat, add lemon zest, lemon juice, salt, and pepper. Toss and serve.

The two-pan vs one-pan question

Restaurants almost always blanch and shock the beans, then sear the mushrooms separately, then combine. Home cooks can simplify to one pan if you accept slightly softer beans.

One-pan version: Heat oil, sear mushrooms 6 to 8 minutes. Add beans and 3 tbsp water, cover, steam 4 minutes. Uncover, add aromatics, finish. Faster, slightly less crisp beans.

Two-pan version: Above method. The beans stay snappier and the mushrooms get more color.

For weeknight dinners, one pan. For a dinner party or Thanksgiving, the two-pan blanch-and-shock route is worth the effort.

Picking the right mushrooms

Cremini are the workhorse choice: cheap, available everywhere, browns nicely. Shiitake (caps only, stems are tough) bring a more pronounced umami. Oyster mushrooms add a softer, almost seafood-like quality. King trumpet sliced thick gives the most meaty texture. Lion's mane, torn into bite-size pieces, is a wonderful option if you can find it, with a delicate crab-like texture.

Mix two types for the most interesting plate. Half cremini and half shiitake is a reliable combination.

Variations worth trying

French amandine style

Add the 1/4 cup slivered almonds and double them to 1/2 cup. Toast in the pan with the butter before adding shallot. Finish with a heavier squeeze of lemon. This is a classic French preparation that takes the dish from side to special.

Soy-garlic Asian-inspired version

Swap butter for sesame oil. Add 2 tbsp soy sauce and 1 tsp honey at the end. Finish with sesame seeds and sliced scallions. Skip the lemon, add a splash of rice vinegar instead.

Bacon and shallot

Common mistakes

  2. Skipping the ice bath. Beans keep cooking after they come out of the water. The shock is what gives you the snap.

  4. Overcooking the beans in the pan. You are reheating, not cooking. 2 minutes is plenty if they were blanched correctly.
  5. Burning the garlic. Add it last, only after the mushrooms have browned. 30 seconds is enough.

Make-ahead notes

You can blanch and shock the beans up to a day ahead. Wrap in a paper towel inside a zip bag. The mushrooms can also be seared ahead and held at room temperature for 2 hours. Combine and finish in 5 minutes when you are ready to serve. This is what makes the dish doable for Thanksgiving.
